Spinach Salad with Peanut Dressing
This salad is a meal in itself! Tatsoi can also be used instead of spinach. From Moosewood

1 1/2 cup sweet potato matchsticks
1 tsp veg oil
sprinkling of salt
large bunch spinach
2 hard boiled eggs

Dressing:
2 tsp olive oil
3/4 cup chopped onion
can chopped tomatoes
1/8 cup peanut butter
pinch of sugar
2 Tablespoons chopped cilantro
salt to taste

Toss sweet potatoes with oil and salt, roast in the oven at 400 degrees 15 – 20 minutes. Meanwhile wash and de-stem spinach and chop up hard boiled eggs.
For the dressing, saute the chopped onions in oil until translucent, then stir in tomatoes, peanut butter, and the rest. Bring to a simmer and cook for about 5 minutes. Add more salt to taste, and some Tabasco if you like the heat.

To serve, divide up the spinach onto 3 plates, top generously with peanut sauce, then sweet potatoes and egg. Serve with sliced lemon.

Hello!

We are pleased to be able to offer you some fresh veggies this week. It has been a long stretch of cold weather and we are looking forward to some time outside in the sunshine! There is much to do to prepare for the growing season, and although we aren’t in a hurry for Spring to get here, the warmer weather does help to get more work done!

There is a nice selection of produce, however the quantities are not high. It is hard to estimate quantity this time of year. If you see something is already sold out, please leave us a comment of what you would like and we will do our best!

We are no longer carrying West Wind meats, however they will be delivering at Trinity Church on Wednesday while we are there. You can go to their website, www.westwindfarms.com and place an order through them.
We will continue to have chicken and eggs from McDonald Farm. However, due to the cold the McDonald Farm chickens have slowed in their growing, and he won’t be offering chickens for awhile until they fatten up!

Please remember to spread the word about Fresh Harvest. We are offering a $10.00 credit to existing customers when you get a new person to sign up and place their $50.00 deposit.
