Arugula and Red Leaf Lettuce Salad
Here is a beautiful and flavorful simple salad – we have the perfect greens for it this week!

  • 1/2 pound arugula
  • 1/2 pound red-leaf lettuce
  • 1 tablespoon Dijon-style mustard
  • 1 tablespoon red-wine vinegar
  • 1 teaspoon finely chopped garlic
  • Salt and freshly ground pepper to taste
  • 1/8 teaspoon ground cumin
  • 4 tablespoons olive, corn or vegetable oil
  • 4 tablespoons finely chopped parsley or chervil

Preparation

1.Pick over the arugula and lettuce and wash in cold water. Rinse and pat dry.
2.In a salad bowl, put the mustard, vinegar, garlic, salt, pepper and cumin. Beat gradually with a whisk while adding the oil. Add the lettuce and arugula, and toss well to blend.

YIELD
4 to 6 servings

Hopefully you have been enjoying this beautiful weather – surely finding some time to savor the blooming trees and warming earth.

We are delighted to tell you we will be ordering new bags this week with the Fresh Harvest logo on them. Your order will be packed in them soon! We will be asking for a $6.00 donation to cover the bag cost.

Please keep us in mind this season when you are planning your special events and need some flowers for the occasion. Local and Organic are as meaningful in the flower world as they are with food, and we grow a beautiful variety of blooms all summer long and can provide you with bouquets or arrangements for any purpose. Just email Tally if you have any questions and to reserve a date.

We have a new farm with us this week – Darby Farm from Thompson Station. They grow, harvest, and process their sorghum cane right on their property using only organic methods, and we are pleased to be offering their Sorghum to you! If you haven’t yet tried this tasty treat, now is the time. It’s the Southerners’ maple syrup!

There is a new Recipe page on this website (there should be a new Recipe section on your header, if you haven’t seen it yet!). Please send Tally any good seasonal recipes you would like to share so we can have a nice database going for everyone.

We know that you have many options these days for buying produce, so we appreciate your support and honor your feedback. Please let us know any joys or concerns you may have with our products and service, so that we may better meet your needs. We are not the biggest farms out there, but we aim for our service to be more personable and for our vegetables to be more delicious than whatever else may be available.

– On March 26th, Tally will be giving a talk at the Tennessee Organic Growers Conference called “Diversifying your Farm with Flowers”. You can go to the TOGA website, www.tnorganics.org, for registration info.
– We will have a booth at the Nashville Eco Challenge Green Food Expo and EKO-sher Fest on April 3rd at Nashville’s Gordon Jewish Community Center
– We will also be at Earth Day in Centennial Park on April 23rd in the Exhibitor’s Area, so stop by and say hello!
