Market News

Hello!

Just a reminder to get your order in before Tuesday evening! There is some new spinach added, as well as still some good greens available. Spinach is a great cold weather crop that just tastes sweeter in the winter, and is so versatile!

Also up on the market are the first flowers of the season! These are grown in a hoophouse and are just starting to come in, so a limited amount is available. These sweet flowers are delicate looking, but have a great vase life!

Thank you so much for all your support!

See you Wednesday!

Coconut Chicken and Sweet Potato Stew

Serves 8
1/3 cup peeled and thinly sliced fresh ginger (3 ounces)
4 cloves garlic, peeled
2 jalapeño peppers, chopped (seeds removed to reduce heat)
1/4 cup freshly squeezed orange or lime juice
1 tablespoon paprika
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
2 tablespoons water
3 tablespoons peanut oil, divided
1 large onion, coarsely chopped
1 (15-ounce) can diced tomatoes and their juices
1/2 cup roasted peanuts
1/2 cup unsweetened coconut milk
1/4 cup shredded unsweetened coconut, plus more for garnish
2 cups low-sodium chicken broth or stock
1 teaspoon kosher salt, plus more as needed
1/2 teaspoon freshly ground ground black pepper, plus more to taste
1 pound sweet potatoes, peeled and cut into 3/4-inch pieces
2 pounds boneless, skinless chicken thighs, cut into 1 1/2-inch pieces
Serve with: orange or lime wedges, chopped peanuts, chopped cilantro, and cooked rice (optional)

Pulse the ginger, garlic, jalapeños, juice, paprika, cumin, coriander, turmeric, and water in a food processor fitted with the blade attachment until it forms a paste; set aside in the food processor.

Heat 2 tablespoons of the oil in a large saucepan over high heat until shimmering. Add the onions and a pinch of salt and stir to combine. Reduce the heat to medium and cook, stirring often, until softened, about 8 minutes.

Stir in the ginger paste (reserve the food processor; no need to wash) and cook, stirring, until the paste begins to brown, about 3 minutes.

Stir in the tomatoes, peanuts, coconut milk, and coconut and cook, stirring often, until the mixture thickens slightly, about 5 minutes. Transfer back into the food processor and purée until smooth. Return the mixture to the saucepan. (Alternatively, purée it directly in the saucepan with an immersion blender.)

Add the broth and measured salt and pepper. Bring to a simmer and cook for 15 minutes. Stir in the sweet potatoes and cook until tender, about 20 minutes. Keep warm over low heat.

Heat the remaining 1 tablespoon of oil in a large skillet over medium-high heat until shimmering. Season the chicken with salt and pepper. Working in batches to avoid crowding the skillet, brown and cook until the chicken is cooked through and the juices run clear when pierced with a knife, about 8 minutes. Add the chicken to the stew and stir to combine. Taste and season with salt and pepper as needed.

Serve garnished with shredded coconut, orange or lime wedges, peanuts, and cilantro. This can also be served over rice.

Carrot and Sweet Potato Soup

A wonderfully hearty, creamy and healthy soup using our abundance of sweet winter carrots and sweet potatoes

4 tablespoons unsalted butter
2 medium yellow onions, chopped
1 tablespoon curry powder, plus a bit more for serving
1 pound carrots, peeled and chopped into 1-inch pieces
1-1/2 pounds sweet potatoes (about 2 small), peeled and chopped into 1-inch pieces
8 cups chicken or vegetable broth
1-3/4 teaspoons salt
2 tablespoons honey
Freshly ground black pepper
Instructions

In a large pot, melt the butter over medium heat. Add the onions and cook, stirring frequently, until soft and translucent, about 10 minutes. Do not brown. Add the curry powder and cook a minute more.
Add the carrots, sweet potatoes, chicken broth and salt and bring to a boil. Cover and simmer over low heat until vegetables are very tender, about 25 minutes. Stir in the honey. Using a stick blender, puree the soup until smooth and creamy. (Alternatively, cool the soup slightly, then puree in a blender in batches. Be sure to leave the hole in the lid open, and cover with a kitchen towel, to allow the steam to escape.) Season to taste with salt, pepper and more honey if necessary. Ladle soup into bowls and sprinkle with more curry powder if desired. (Note: As the soup sits, it will thicken up so you may need to add a bit of water to thin it out.)

Hello!

Happy New Year! We wish you all a very healthy and joyful 2017. May you find much love, compassion and support in your family and community, and may you share it with those around you!

It is our pleasure and our privilege to grow food for you, and provide for you a wonderfully curated selection of the best local produce, meats, and products available. We look forward to a great 2017!

We are switching to an every-other-week delivery schedule. We will be delivering this week, and our next delivery will be on Wednesday, January 18th. Please stock up on items for the two weeks. Load up on our frozen meats and eggs. We’ve got a great selection of root crops and winter squashes that will also keep for a few weeks. Our greens and lettuces are so freshly picked, that their shelf life is quite long, so order more of those as well!

By switching to an every other week schedule, we are giving our slow growing winter crops more time in between harvests to catch up. We want to be able to offer you the best selection with the largest quantities available, and this is the best way to do this!

In other news, The Bloomy Rind is in the process of moving their location and reorganizing their business. They will now be a strictly wholesale operation, working with stores and restaurants all over town and beyond to offer their curated selection of artisan cheeses. We are lucky here at Fresh Harvest to be able to continue to work with Kathleen and her extensive cheese expertise. She is will continue to bring us the finest selection of small batch cheese that there is anywhere! There will be no cheese this week, as the business is right in the middle of reorganizing. But, they will be back on the week of the 18th!

We also have a new product! Tru -bee Honey has their lip balms up! Made with their beeswax, they smell good and feel great.

Thank you so much for all your support!
See you Wednesday!

Ginger Noodle Soup with Asian Greens
from Naturallyella.com

This is a great soup for winter colds, and is delicious with tatsoi or our Chinese cabbage
1 tablespoon olive oil
1/2 bunch scallions
2 cloves garlic, minced
2 tablespoons minced fresh ginger
2 cups vegetable broth
2 cups water
1 head tatsoi or chinese cabbage
4 ounces ramen noodles (see note)
Salt, if desired
Sesame Seeds, for topping
Red Pepper Flakes, for topping
INSTRUCTIONS
In a stock pot, heat olive oil over medium-low heat. Trim the ends off the scallions and chop up the light green stem. Save the dark green tops for topping. Next, add the scallions to the pot with the garlic and ginger. Cook, stirring occasionally for 2 to 3 minutes until the garlic and ginger is fragrant.
Pour in the vegetable broth and water. Bring to a boil, reduce to a simmer, and cook for 5 minutes.
While broth is simmering, cut the end off the head of greens. Cut off the stems and then cut the stems into thin strips. Roll the leaves together and also cut into strips.
Add the stems to the broth and cook for 5 minutes or until stems are starting to be tender. Follow with the leaves and cook for another 5 minutes more. Finally, stir in the ramen and simmer soup until the noodles and greens are tender, 4 to 6 minutes. Taste and add salt as needed.
Divide soup into two bowls. Then top with chopped scallion greens, sesame seeds, and red pepper flakes

Hello!

We have two more weeks of deliveries before Christmas. We will be taking off the Wednesday of December 28th, and hope to resume deliveries on Wednesday January 4th. This start up date for the new year is weather dependent! Although we always intend to deliver year round, the weather determines a lot of what we can pull off. If it is too cold or hazardous driving conditions we will not be delivering. Also, crop availability affects our order schedule. If our vegetable selection gets low, we then may switch to an every other week schedule. THat way you can still stock up on eggs and meats , and get your available veggies.

Also, any graphic designers out there? We are interested in updating our logo, and wondering if any customers would be willing to do the work in trade for credit in your account! Please email John or Tally if so!

Bear Creek Farm has a special this week! The freshly butchered sirloin steaks are buy one, get one free!

Tally will be making Wreaths this week and next for Holiday decorating. If you would like a one of a kind, farm foraged wreath you can place your order on the Market Page under “Holiday Wreaths”.
