Carrot and Beet Slaw with Pistachios and Raisins
from Bon Appetit, 2013

6 SERVINGS
2 garlic cloves, crushed
¾ cup golden raisins
¼ cup white wine vinegar
6 medium carrots (about 1 lb.), peeled, julienned
2 medium beets (any color; about 1 lb.), peeled, julienned
½ cup (packed) fresh flat-leaf parsley leaves
¼ cup (packed) fresh mint leaves
3 Tbsp. fresh lemon juice
½ tsp. crushed red pepper flakes
Kosher salt and freshly ground black pepper
? cup extra-virgin olive oil
¾ cup unsalted, shelled raw pistachios

Preheat oven to 350°. Spread out pistachios on a small rimmed baking sheet; toast, stirring occasionally until golden brown, 6–8 minutes. Let cool; coarsely chop.
Combine garlic, raisins, and vinegar in a large bowl; let sit 1 hour.
Remove garlic from raisin mixture and discard. Add carrots, beets, pistachios, parsley, mint, lemon juice, and red pepper flakes; season with salt and pepper and toss to combine. Add oil; toss gently.

Happy Memorial Day!
Summer is here! Even though the temps are still on the cooler side, we know schedules are changing as school gets out and folks head out of town. Please keep us in mind for your local produce needs! And if we don’t see you this summer, we will certainly be here when you return!

Looking ahead, we have tomatoes coming in soon, as well as locally sourced, organically grown blueberries and blackberries. Other summer crops will soon be here in abundance!

We will continue to have The Peach Truck set up next to us – although they say their season will be shorter this year!

Bear Creek Farm has a new item up – all beef cheddar /jalapeno hot dogs! These are sure to be a summer time, grill out staple!

ROASTED SPRING SALAD WITH RADICCHIO
This is a spring salad of the best sort—hearty, bright, and filling enough that it can stand alone as a light meal .

For the salad:
1-2 fennel bulbs
1 bunch of carrots
a few beets
1 head of broccoli
1 head of raddichio
2 cloves of garlic
olive oil
salt

For the dressing:
half a lemon
3 tablespoons olive oil
1 teaspoon honey
cracked pepper to taste

Directions

Scrub the beets and parboil them on the stove top in a heavy sauce pan until you can pierce them with a fork. Cool to handling temperature then remove the skins. Halve or quarter any large beets. While beets are simmering and cooling, prepare the fennel.
Preheat the oven to 375. Trim the fennel bulb and thinly slice on a mandolin from top to bottom, keeping the base intact. If you don’t have a mandolin, simply use a sharp knife and slice as thinly as you can through the whole bulb from top to bottom. Toss with olive oil and arrange on a baking sheet. Roast until beginning to turn golden brown, turn and roast for another minute or two. If your pieces are not an even thickness, they may not brown evenly. Not to worry, just remove them as they are done and allow the rest to finish cooking. Remove to a plate to cool.
Turn oven up to 400. Place beets, carrots, peeled garlic cloves, and broccoli florets evenly on a baking sheet and drizzle with olive oil. Roast until taking on some color and the broccoli is a touch crispy. The broccoli will be done first, so remove and continue roasting the rest, about 25-35 min. total. Turn the vegetables as needed to prevent burning.
While you let the vegetables cool a bit, coarsely chop the radicchio and place in a large serving bowl.
Make the dressing: combine all dressing ingredients in an empty jar, screw the lid on tight, and shake to emulsify. Transfer the vegetables on top of the bed of radicchio, arrange the fennel crisps on top, and drizzle on the dressing. Ta da!

Hello!

We hope you are enjoying this beautiful day, and getting to spend some time with friends and family. Happy Mother’s Day to all the women out there who share their love and care with the world and all creatures. We appreciate you!

This year we will again be hosting The Peach Truck along side our delivery at Trinity Church. The Peach Truck is a family run business that brings peaches up from Pearson Farm in Georgia. They will begin setting up next to us we believe in the next week or so, and be there through the season. They set up at 4:00, and are there until 6:00 or until they sell out.
These peaches are not local, and are not organic. Because Fresh Harvest has a very strict policy of only selling local and organic produce, we do not take orders for the peaches through us or the website. We have invited them to join us however as a service to you!

Have lots of good stuff this week – new crops are coming in every week this time of year and there is a great diversity of yummy veggies for you!

Please remember we love to have our plastic bags and containers returned to us! If you have bought a plant, we will take those pots back as well. Please only bring us recyclables and reusables that we have given you – not other kinds you get from the store.

Hello!

It is great to be back with you all on a weekly schedule! We love to see all the familiar faces, and meet the new customers! Thank you so much for all your support! We always strive to grow and provide for you the best locally and organically grown food possible. We hold dear the trust you put in us to pack your order every week! Because of this, we really appreciate your feedback.

The strawberries this year have been a challenge! John and his crew are monitoring the crop diligently and doing strict quality control, however all the rain has really done a number on the plants. There is some rot happening inside the berries that is undetectable while picking. As you can imagine, this is a dilema! We have some quarts going out that have been excellent, some that are bad, and some a mix of both.

This week is no different – we hope to get a good supply of quarts to bring to delivery for first come first serve. However, this will only be if we are generally highly satisfied with the quality. Still to be determined! We appreciate your support and patience with this! And we do hope you get some good berries!

Have lots of good stuff this week – and The Bloomy Rind is back with us!

Hello!

Well, folks, it has been a rough start for the strawberries! The rain seems to have affected the crop more than we initially thought. We had some complaints this week about the berries being bad in the middle or turning brown quickly. Although the crew picking berries did a thorough job of culling the berries when picking – throwing at least half away – it was hard to spot the damage on the inside.
At this point, John does not want to offer any berries until he is positive they are of the best quality. The hope is that by keeping the fruits picked, the rot will work itself out and the plants will set some good quality fruit! We will be bringing strawberries on Wednesday if we feel they are of good enough quality!

Meanwhile! We’ve got lots of other great veggies for you as well as beautiful transplants for your garden or patio!

The Bloomy Rind is off this week but will return next week!

*Rhubarb-Strawberry Pudding Cake *

I first had this cake cooked for me by Nancy Vienneau, and it has been my go to ever since! The recipe can be found on her blog Good Food Matters at nancyvienneau.com
adapted from Gourmet, April 2007

¼ cup water
1 ½ teaspoons cornstarch
1/3 and ½ cups sugar
3 cups chopped fruit (I prefer 2 cups chopped rhubarb, 1 cup strawberries, –
any variation you choose)
1 cup all purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 large egg
½ cup milk
1 stick butter melted and slightly cooled
1 teaspoon vanilla

Preheat oven to 400 degrees and put oven rack in the middle position. Butter an 8×8 ceramic or glass baking pan. Stir together the water, cornstarch, and 1/3 cup sugar in a saucepan and heat. Stir in the rhubarb, if you are using it, but not the strawberries. Simmer, stirring occasionally, for about three minutes. Remove from heat and add the strawberries.

Whisk together the dry ingredients: flour, baking powder, salt, and the remaining ½ cup sugar. In a separate bowl, whisk together the wet ingredients: egg, milk, butter, vanilla.

Now add the dry ingredients to the wet, and stir in until well combined. Do not overbeat.

Coat the bottom of the baking pan with ½ of the fruit mixture. Spread the batter over that, then dollop the remaining fruit mixture on the top. Bake for 25-30 minutes. Test for doneness with a toothpic -if it comes out clean, it’s done!

Allow to cool on a rack for at least 5 minutes before serving. This can be served warm or served later at room temperature. Wrap and refrigerate leftovers, if there are any.

Makes 8-10 servings.

Rain got you down? Never fear – spring is here and this week we are filled up with all the goodness it has to offer!

John’s strawberries are in! So now is the time to stock up on these organic, local fruits! It looks to be a good strawberry season, and we are excited and pleased to bring you some of the best organically grown fruits around. Remember, strawberries are one of the “dirtiest” crops out there in terms of their retainment of dangerous pesticide residue. If you are concerned about such things, choose only organic strawberries! If they are local, they will be even better.

We also have out herb and tomato starts available this week! These plants are ready to be planted. They are grown with love using only organic, non GMO seed, and organic potting mix. They are disease free and we get tremendous feedback about the health and vigor of these babies as they grow in your garden!

You may have noticed our new shiny bags! Please remember to bring back your bag when you pick up your order. Also, we do appreciate you bringing us containers or plastic items that we pack your veggies and eggs in. Please do not bring us recyclables that we do not use.

This week we have fresh dug tuberose bulbs from Tally’s field! Get a bag and put them in a sunny spot either in a pot or in the ground, and you are guaranteed a beautiful and extremely wonderful smelling flower in your garden this year!
