Crunchy Asian Slaw with Ginger-Tahini Dressing

A great slaw with a light, refreshing twist

Serves 4
For the Ginger-Tahini Dressing:

3 scallions, white and light green parts only, minced
1/4 cup low sodium tamari or soy sauce
1/4 cup water
2 tablespoons tahini
1 tablespoon fresh lime juice
1 tablespoon rice wine vinegar
1 tablespoon pure maple syrup
1 1/2 tablespoon freshly grated ginger
1/2 teaspoon crushed red pepper flakes

For the salad:

2 cups shredded red cabbage
1/2 cup shredded napa cabbage
2 carrots, coarsely grated
1 medium-sized beet, coarsely grated
1 cup cilantro, finely chopped
1 jalapeño pepper, seeded and cut into thin slivers
1 cup cooked, shelled edamame
1/2 cup peanuts
1/2 cup raisins
2 tablespoons sesame seeds

Prepare the dressing by whisking all of the ingredients together until smooth and well-combined. This works best with an immersion blender but a hand whisk is fine too. Taste the dressing and adjust seasonings if needed.

Place the red cabbage, Napa cabbage, carrots, beets, edemame, cilantro and jalapeño in a large bowl. Stir to combine. Pour the dressing over the cabbage mixture and toss until everything is evenly coated. Add the peanuts, raisins, and sesame seeds. Serve chilled or at room temperature.

We are in the swing of summer – can you believe it is almost 4th of July? We love this exciting time of year and all the good food it brings.

Like tomatoes! They are coming in this week and we have a mix of red and yellow heirloom varieties for you!

Blueberries are about half way through the season – now is the time to stock up! Have you frozen a bunch yet? It is so easy and will keep you in berries all winter.

Just a few more weeks on the peaches – however should have blackberries soon!

The Bloomy Rind is off this week but will return next week,

You have many options these days for produce, an we appreciate you making the effort to purchase the local and organically grown fruits and veggies we offer.

Fresh Harvest is lucky to have a wonderful and talented community of vendors – farmers, meat producers, and local artisans and small business owners who are truly some of the best in Nashville.

This is a great week for produce! We are so excited to be able to offer you the seasons first blueberries. The blueberries are organically grown by Blue Honey Farmin Eagleville, and are always high quality and delicious!

We’ve got a ton of great produce for you this week. The first fresh dug potatoes are here!! These are truly an amazing treat that are so different than anything you can get in a store. We’ve also got lots of summer squash and cucumbers, as well as late spring holdover greens and root crops. Enjoy!!

Happy Fathers Day to all the men out there- Fathers, grandfathers, uncles, big brothers, good friends, and male mentors of all kinds!

We got some much needed rain this week! It’s a great week for produce! Think coleslaw and cabbage of all kinds- raw or cooked itbis s delicious summer staple and so versatile. Lots of other great veggies too, including potatoes and other summer goodness. Won’t be long and tomatoes will be here!

We are so excited to be offering blueberries. The blueberries are organically grown by Blue Honey Farmin Eagleville, and are always high quality and delicious!

Basic Vinaigrette Recipe

We’ve got so much great lettuce this week – whip up a batch of this salad dressing and you are good to go! And it keeps for up to 10 days in your fridge!

INGREDIENTS

3 tablespoons red wine vinegar
1 garlic clove, minced
1 teaspoon Dijon mustard
Kosher salt
Pepper
3/4 cup extra-virgin olive oil

In a pint-size jar, combine the vinegar, garlic, mustard, 3/4 teaspoon of salt and 1/2 teaspoon of pepper. Cover and shake to dissolve the salt. Add the olive oil and shake to blend. Taste for seasoning…

Hello!

We’ve got lots of good stuff this week! All the best of the shifting season’s produce for you. Lots of lettuce available this week and just so you know it won’t be around much longer! As the warmer temperatures set in the lettuce quickly gets stressed and is no longer a good crop – so enjoy it while you can!

We’ve got some of the season’s first green beans and cucumbers, and looking ahead, we have tomatoes coming in soon, as well as locally sourced, organically grown blueberries and blackberries.

The Bloomy Rind is off this week but will return next week!

And please remember to bring us your bags when you pick up your order!

We will continue to have The Peach Truck set up next to us – although they say their season will be shorter this year. The peaches so far have been excellent!

Bear Creek Farm has a new item up – all beef cheddar /jalapeno hot dogs! These are sure to be a summer time, grill out staple!
